Ingredients (makes 8 medium quesadillas):
- 8 Tortillas (whole wheat)
- 1 can black beans
- 1-2 cups low-fat shredded cheese
- 1 jar of salsa
Directions:
- Heat a pan over medium heat or heat an electric skillet to medium heat. *
- Place 1 tortilla in pan. Top one half of the tortilla with 1/4 cup of cheese and 1/4 cup of black beans.
- Fold tortilla half over.
- Heat until bottom tortilla is golden brown and cheese begins to melt.
- Flip tortilla over and cook other side until it is golden brown and cheese is melted.
- Let cool for a minute. Cut into 4 pieces and serve with salsa if desired.
*Or you can microwave the quesadilla until the cheese melts.
