Ingredients (serves 6-8):
- 1 1/2 cups plain Greek yogurt or Light sour cream
- 2 teaspoons low-sodium taco seasoning
- 1 can refried beans
- 3 ripe avocados
- 1 cup mild or medium salsa
- 3 cups shredded iceberg or romaine lettuce
- 1 cup shredded cheddar cheese
- 2 Roma tomatoes, chopped
- 1/4 cup canned sliced black olives, drained
- 1 bag baked tortilla chips, whole grain crackers, and/or sliced vegetables (cucumber slices, bell pepper strips, carrots, etc.)
Directions:
- Mix yogurt (or sour cream) and taco seasoning together in a small bowl
- Mash avocados in a small bowl
- Spread refried beans evenly in an 11×8 inch baking dish
- Spread yogurt mixture over the refried beans
- Spread mashed avocados over yogurt layer
- Spread salsa evenly over the avocado layer
- Evenly sprinkle lettuce over salsa layer
- Evenly sprinkle shredded cheese over the lettuce layer
- Top with olives and chopped tomatoes
- Serve with baked tortilla chips, crackers, or raw veggies
- Store in the fridge
